7" would be a little small for the vent area, mine is a 8" and fits just right.
Yes, it's a Kenwood touchscreen interfaced with the Kenwood navigation system and has another video input to the R-F RAVDVD1 headunit for MP3 tagging dispaly/directory structure navigation and other various things. The other video input comes from a TV tuner tox.

Hmmmmmm I love the idea but yet I fear the complexity. The 7" screen I was referring to was in the picture of the s2k with the red interior using the 1 DIN set up.

It is a bit complex, but I may be able to save you time or the installer you go with some time (and money from your wallet) if you'd like some tips on how to do it.
It took over a month and a half to come up with a working design, you may not want to be without your car that long or not even want to spend that kind of money just to have a bunch of guys with pencils, paper and a tape measurer trying to figure it out.
There's no need to reinvent the wheel, I've already bought it and I'll share.
Then again, you may not want to even go this route unless you've seen it in person. I'm working on a short little video of how it operates and I'll post a link when I get it done. Still pictures do it no justice because there was more to the design than just sliding in and out, it had to be nearly silent when operating and have safety precautions like not working with the door is closed, a recovery mechanism if there was a power loss in the middle of an in/out mode, power disconnect switch for security, a tray design that was smooth and strong enough to take up to 200 pounds of impact force from the sides, a slide tray that would clear the headunit face and have the screen at the proper angle so that when it was fully extended, no visibility would be lost on the screen.
We were 99% succesful in achieving all of our goals.
There are some other similar methods that people have done, I've seen a pic of a screen that came out of the top of the dash and was concealed when down. I didn't go this route because of the visibility loss out windshield. You can also remove the passenger airbag and have that lid pop up with the screen underneath.
I can't speak for everyone else feelings on the S2000, but Honda didn't leave much room for modification on the interior, it's just not in the cars design nature.
