Thanks for all the replies.
No sign of damp in the footwells or boot.
However, I replaced the cabin air filter and the old was absolutely disgusting and completely grey/black + stuffed with bits of leaves/seeds etc.
I am sure I paid to have this replaced when I got the car and have only done 1-2k miles in it since...
Will see if it makes a difference.

The carbon one is $16 on Amazon.com and £72GBP on Amazon UK including delivery!!
I will however order the Carbon from Amazon.com and replace it after summer - when I more likely to drive with the HOOD up

This is a common problem with cars with air conditioning. I have it in another honda. When people run with AC on and then shut off the car without first turning the heater on for at least a minute to dry things out, that condensation sits near/on the ducts/vents/compressor and mold grows. At this point it's basically impossible to fully clean.
A temporary solution is to get a can of frigi-fresh to spray in the system, which when following the instructions will temporarily fix it, but the mold never really goes away.
I stopped using AC all together due to both myself and my girl getting sick when it's turned on. Replacing the cabin filter doesn't help. The worst cars for this are ones that have been driven in stop and go traffic in hot climates.
