Default Re-use Ray's valve stems?

I am having my Volk ce28 wheels refinished. The existing Ray's valve stems have to be removed. Can I re-use them? Or, will I need new valve stems?

You can reuse them assuming they are in good working condition.

They are - I assume. Is it just a matter of pushing them out of the rim by hand? Is there a trick to it?

If they are, in fact, Rays valve stems, they are held in by a nut on the inside.

The nut is on the outside. It's the hex portion of the sleeve that extends down and over the air stem. You can use a quarter to fit into the recess in the very back of the air stem, and carefully use a socket to unscrew the collar from the front.

Just inspect every rubber washer. They tend to crack over time. If they are in fact cracked, you should replace since it will lead to a potential leak. Replacement parts can be found on ebay, but its easier just ti get a new set
