I don't hold much faith in the gravity bleed - I know others say it works for them but looking at the pipe runs you can see lot of places that air can get trapped - if it was all "downhill" from the reservoir I'd be inclined to give it a go.
Go for the usual "two man" bleed with an assistant working the peddle while you release and tighten the bleed screw - or if you've got nobody who'll help, a £2 one man bleed pipe http://www.ebay.co.uk/itm/SOLO-BRAKE...-/200345014236 or make your own with tubing and a bung and cut a small slit in the tubing at the bung end.

Just to update, got the rear calipers done today, took majority of the day on my own to do it, all went to plan with no problems, used the gravity bleed method which took a while but did work, pedal feels a lot higher and harder than before only trouble is i feel i wasted more fluid than needed as the old fluid did not look any different than the new fluid, used 1 full 500ml can and probably another 100-150ml from another can.

I had a bit of reading around and went for the simple option of Hammerite smooth silver and took an angle grinder with a wire brush attachment to it for prepping. Seems to have done the job. It does say that you need to use the Hammerite all metal primer for zinc coatings (assuming that's what the calipers are - the ones in those eBay links look painted to me)

also while I'm here I had a slight sponginess left after much bleeding. I tried the "wedge the brake pedal down overnight" (disconnect brake light fuse or battery) despite about a 50% split on internet opinions and it worked for me - really solid pedal feel and I have no idea how it works

I used the POR-15 kit (several on ebay etc) - all hassle free and a perfectly good finish, paint wise.
If was I doing it again, I would unbolt the calipers rather than paint in situ
