What are the softest, stickiest road tyre?

My car barely moves so don't care about longevity and does not move in the wet so don't care about that either
I have Yoko's on the SC one, they are a good tyre so an option

Another 100+ miles today in the sun on the Michelin’s, sidewall must be a bit softer than the old S002s as the poor road surfaces don’t jar so much but seems to hang on nicely, had a run over the wife’s least favourite road, Dukes pass from Aberfoyle, and although no maximum attack, car felt settled and secured on the tighter stuff at speeds I would normally go through at.

Any tyre/wheel gurus able to offer any insight..?

My wheels specs are:
17x7.5 on the front with ET45
17x9 on the rear with ET63
I'm currently running PS4s
Front 215/45
Rear 245/40

internet suggests my wheel widths would suit tyresFront 215 or 225
Rear 245 or 255

My current set up looks like it's got a small bit of a stretch so was considering sizing up but I want to try AD08s which apparently size up anyway, so my question is, if I go with AD08s, which size would be best?

Current set up:
