I have a 04 KTM 250 EXC 2 stroke that I recently restored and converted to supermoto/street legal. Its so much fun! Running the new Bridgtone S20 battleaxe 17" 120/160's. Bike weighs 240lb wet and puts down 45hp average stock.

I have however upped the compression to optimize 92 oct, had some other trick head mods done and ported intake and carb and added an intelajet for being able to lean out the main jetting for more WOT power with the ability to manually control main jetting/afr via enrichment knob. I can tweak it for temp or elevation changes to always get the best WOT tune out of the bike, plus the jet resides in the mouth of the carb for improved fuel atomization (kind of like a dry shot in a nitrous set up) Its about as close to efficient as you can get without being FI/ECU controlled. I don’t know exactly how much power I added with this stuff since I haven’t dynoed yet, but its made really noticeable changes in power curve off idle all the way through powerband, particularly in the upper revs where the band has increased about 2k rpms. You cant keep the front wheel on the ground with these bikes stock anyway, but when you road gear them to cruise at 70mph and pull 120mph, that gearing changes the character of the bike to be more predictable and hold the road, and witht he added mods/power its a great match. I got no issues keeping up with any of the big liter bikes under 120mph through the twistys like you im sure. Power/weight is fantastic and I can flick that thing around like nothing, brake super late etc.

My first bike was the drz400sm so I can relate, although it had a FCR carb and pipe it was still slow and heavy for a supermoto, but you're bike sounds like it'll rip!!! I bought the duc shortly after, and haven't regretted it since, it's a beast of a bike for sure and far more than I can ever be able to ride at this point, I know I'm not Hayden or Rossi. Lol

Oh yeah I had a buddy who had one of those he rode in the dirt, I think it was approaching 300lb and left some to be desired on power delivery. After a year of getting beat up on that bike he picked up a KTM 250EXC. Much better dirt bike, and just as much on the road ive discovered lol

Id love to take your bike out for a spin, i have yet to feel a modern big sport twin. I recently rode a KTM Enduro, which is their aggressive dual sport outfitted with the big single 690 Lc4 rotax engine, and I was amazed how smooth it was, felt like am inline 4 with a nice power surge from 5-7k rpm. Its not a particularly high revving motor with a 7.5k redline. But it makes such nice smooth torque through the entire rev range and the motor is really eager to rev, feels quite racy/fun.

CBR 500 RA The S serves a whole different need (touring/Track), The bike is a toy for nice sunny days on the local backroads.
