Looking for advice:

I currently live outside the US, but am a California resident and I have an s2k in storage that I would like to take out for maintenance and maybe drive around for a week. Car is non-operational (DMV) and from what I understand I need to ge insurance before I can smog/register and take it out for maintenance/short drives. Looked up online and the recommended method to sign up for regular insurance then cancel when I leave the country. Does anyone have any other recommended method or is this the best way? Looking forward to getting her serviced so any advice is greatly appreciated.
