I have a 2012 Baja Series with a 6spd and I love it! It a comfy DD, incredible off roader, and great quad hauler. It can also easily tow the S.

I have a friend with one and his main complaint is they suck gas, otherwise they are solid.

If it were me and I wanted:

Something that can tow 7000 pounds
Something that can go off road
Something that fits well in the garage

I would look at the Jeep Grand Cherokee. Normally I would always pick the Japanese product but my family has owned three grand cherokees and they have all been really solid.

Mileage will be about the same and interior comfort and ride will be much better at the expense of a small pickup bed, but I either get loads of stuff delivered or borrow the neighbor's utility trailer.

I tow 4000 pounds with my 2010 Highlander and it does fine, but it is a fairly boring ride, without stump pulling grunt. I get ~ 24mpg in it which is why I bought it. But it gets the boat in and out of the lake so it is fine.

Buddy of mine has one and said that if he had the choice now, he'd pick up a typical 1/2 ton truck instead. Same gas mileage, more towing capacity, more room and just better all around for carrying people and cargo (not to mention more amenities and options). 1/2 ton pickups are quite cheap on the used market (comparing used cost vs new cost). The Tacoma commands a premium and that premium is only justified if you plan on keeping it a long time or else absolutely must have a smaller pickup.

My Dad has a 2010 TRD Tacoma, and I really love the damn thing. The only complaint I have is the driver seat doesn't play well with my back on long trips.

I wouldn't even consider a smaller truck unless it was 4x4 and got 25mpg highway.
