Evora is a typical V6, not an H6. The engine is from the Toyota Camry.

The engine should be stout but doing things like spark plugs, belts, etc are a pain because of the layout.

I've been in most of these on track, and I'd have to say the GT350 gets my vote by a mile. That engine is absolutely great, and the chassis is surprisingly good. It obviously feels different than a C7, and won't be as fast as something like a GrandSport, but it'll feel great doing it. Besides, it doesn't seem like you're shopping based on magazine performance numbers (no one should, but many fall into that trap trying to buy "the best").
The CTR I haven't experienced, and while I'm sure it's a great FWD car, it's still FWD. Giving a GT350 the full beans is going to feel much different than constantly overwhelming the front tires and driving around them (which gets old IMO, yes, I've owned and tracked FWD Hondas - more torque is the last thing they need when actually driving them when it comes to enjoyment).

What are you planning to spend and how will the car be used?

C7 Grand Sport - all the mods for tracking with the more reliable (better-cooled) base engine. You can get one for $65K these days, from the "high volume" dealers (Kerbeck, Rick Conti, etc), give or take.
Other than that, I'd go GT350, purely on the basis of the motor. After that, ZL1, just because it's a beast.
I love the exterior of the Dodge products but that interior is pretty "meh" to me.

No more than 65k, and 65k would be iffy. Luckily, these cars get much cheaper if they're a year old and lightly used, so theoretically I shouldn't have to spend 65k.
But.... it would be great to have a brand new one, I'm still deciding on that too - new or used.
Car would be a daily.
I am really surprised only 1 vote for the ZL1. I keep watching reviews and it looks so awesome.

Some good options, but I’d personally go for a heavily discounted new C7 Grand Sport. It’s a beast at a very good value price.

I agree with Quickag. It's the only real sports car of the bunch. Plus, any power level you could want to make is attainable with that engine. Lingenfelter has a package where they will install a cam, some bolt-ons, and a tune, AND they warranty the engine for 36,000 miles, and it makes something like 540 to the wheels, or something crazy like that.
