Default Will these wheels fit the S?

This auction is for a set of "Staggered" Two: 18x8 (40mm offset) and Two:18x10 (35mm offset) Brand New Bronze BSA 215 wheels with 5x114.3 Lug Pattern, to fit most RWD performance cars, * ie: Toyota Supra, Acura NSX, Nissan 300zx, S14 / S15 Nissan 240sx, Infiniti G35 Sedans (Brembo equipped G35 coupes & 350z excluded... Non-Brembo G35 Coupes and 350z may require spacers) - RX7s - Lexus GS, CS, IS 300 400 430, Honda S2000 (possibly 94-04 Mustangs) and more.

I believe they will not fit the S, those offsets are way too low

18x10 +35 will stick out way too much. Not ideal for the S2000 and I am one of the guys that runs extreme offsets.

With a +35 rear the widest you could get away with being somewhat lowered would be

17x8 or 18x8 +35 with 235/40/17 tires or 235/35/18 tires.
Thats pushing it. So at a 18x10 theres no way I would recommend this.

I found a set of SSR professors for Cheap. Under $1500 cheap. I was wondering if this size would be too small or stick out? they are 17X7 +37mm. If they do fit, could I put a staggard tire setup on it, or would that just be dumb?

Yes it would be dumb, you would be sticking out way too far, there are sometimes people who sell those rims with the proper setup here for a few hundred $ more, just save up and get the right rims.

If you're looking for some cheaper rims, look into 5zigen's GN+ there is a member on this board who runs them and they look really nice, you can get a set for about $1000, then you would need tires. He is lowered 1" all the way around and his offsets are 43 in the front and 48 in the back 17x7.5 front 8.5 in the back. If that helps.
