Running in advice
I've had a Nurburing Blue GT on order since mid March and hope to take delivery in a month or so.
I've searched the boards for hints on how to run the car in but other than keeping below 5000rpm for the first 600 miles can anyone give advice on:
Is it better to stick to Super Unleaded (or Optimax) during the run in? Also would anyone recommend changing the oil to Mobil 1..... if so after how many miles.

Use Super (97 octain) or Optimax (98.7 octain).
Don't change the oil until at least 3,500 miles as Honda put in an additive to help the run in.
Always check the dip stick every fill up, as some engines can use lots of oil, especially on V-tec'ing. After the first oil change it will settle down.
Do a search on oil change, lots of info.

bet you can't wait..I've had my car about 3 weeks and did all the same searches that you're doing now, and also bugged hazdjc about the oil thing as he lives nearby

My conclusions are :
Don't change the oil before 3,500 miles for the reasons stated by hazdjc
Have an oil change after that for harsh driving conditions or wait until the first service for normal driving conditions. Interestingly the local Honda service manager advised against a change at 3,500 as he said it would delay the time it takes for the engine block/rings to be fully seated. I'm going to keep my original oil until the first service at about 7-8000 miles, unless it gets really discoloured by then.
Use mineral oil to top up (10W-30 can be found in Ford garages) although people have used 10W-40 mineral oil from Halfords which seems to be ok.
Check both sides of the dipstick and use the lowest reading.
Wait until the car is warmed up before you VTEC it (after you've run it in of course). The manual says wait for 3 bars on the temperature gauge, but I've seen in quite a few places that people drive for 6 miles or 10 minutes to ensure that everything is fully warmed up.
If your car is being imported then you'll need to register it with Honda U.K. else if its from a U.K. Honda dealer then there's nothing to do.
Don't take any technical advice regarding the car from sales people, they don't seem very knowledgeable about the car, always speak to the service manager about such matters and/or consult your fellow owners on this forum (apologies to any sales people reading this, but you know its true

My car is a UK dealer one, and yes I've already found that the sales team don't seem to know much about the car.
I decided on the S2000 after lots of test driving, my company car scheme allows you to buy any car you fancy (as long as it has suibale safety features like ABS and airbags) and also arrange extended test drives....... I was luck enough to have the S for a week over Easter...... I ordered it as soon as I gave the keys back!.
As a comparision I tested the:
Audi TT (coupe and roadster)...... nowhere near as fun, the coupe was a bit slower but the roadster was even weaker.

What kind of oil do you add, if necessary, before the first oil change ??
To me they added 1 ltr. of non synthetic Schell 20- 50, all the others they had were synthetics.
PS: It is true TT drivers go nuts when they see S2000
