I realized that after thinking about this further, that it would take no time at all to jack up the car, stick the wheels on dollies and then wench it into a flat bed. So, you're pretty much stuck if they can get a jack under the car. Especially if you're using 2 jacks, and 2 people.
Best bet I guess is to hide a GPS tracker somewhere and hope they don't find it.

If so, this person has been seriously scoping out cars all over the place.
Just in case they're on here taking notes, I guess I'll mention- I have a C&C permit, and if I see you in my driveway, I'll give you one right in the gut and let you squirm around in pain for a bit before calling 911.
