unless money is not a particular concern for you, I'd get a 3080 rather than a 90. the 90 has similar performance but far more video memory which doesnt really get used unless doing heavy video editing / rendering and other "work" tasks, so the extra cost doesnt really translate into gaming performance.
as for power supplies, there is a whole lot of statistics and data to get into if you want, but basically buy from a major brand, and get the highest 80+ rating you can (bronze, gold, platinum ect). i also recommend speccing the power rating as roughly double what your system will use at peak load. this might be overkill but it's never let me down.

For over-the-counter, this is the best way to go. We've built prototype units at work using burly 750W+ PS. 1000W for a modern CPU/MEM/GPU and disk is not unheard of at all. When we'd go into production, we'd contract out the specs and get custom/made-to-order PSes.
Going to use a 3090 Founder's Edition video card, if I can find one.

Chip shortage is really bunching my undies. I built a rig a couple years ago for a full driving sim with a 2070 that took a dump a few days after the warranty ran out. Refuse to pay $1000+ for a new video card so it has been an expensive paperweight for almost two years now.
The upside is the neighbors don't have to see some 52 year old dude play Beat Saber through the window.

So I ended up being lazy and sought @Feezy 's skills and he assembled it for me with the quickness!
I can run iRacing at 220+fps now, and Assetto Corsa Competitzione with a mix of Epic and High graphics settings to the tune of 110fps+. Monitors are triple Dell 27" 1440p with a 4th 27" cheapo monitor on top.
Here's mine. Its on its 3rd iteration right now, but Im wanting to start the 4th iteration pretty soon if I can score a nicer graphics card at a reasonable price.
