you could eat all day and all night long and still not gain weight! You would prolly lose weight..and dont use my cooking as your excuse cause if I left the cooking up to you we would be eating hockey pucks all the time!

Why not remove the stock rollhoops too, the cage is there for the same purpose.?

I suspect it's to keep the trim for the looks. Kenny's car is a show car. If you haven't seen the back part of the car gutted it looks like...
The roll hoop cover is sealed around the actual hoops and there is no good way put the covers back together. The hoops are only a few pounds anyways, most of the weight is the actual cross brace that holds the hoops. Remove the brace and you have to fab up a new mount for the seat belt reels. I wouldn't count on that Cusco cage to brace the chassis after removing the brace. IMHO you would want at least a motorsport grade welded roll bar before removing that brace.
