when they are tuning the car it will show the air/fuel ratios on his computer. ask him to see the charts on your car, and you should be able to tell he he did a pull when your car was running to lean

I'm not sure, but the data logs will tell you if they did anything really stupid.
Of course if they did something really stupid they're probably not going to make the data logs available, but I'd still ask to see 'em.

Check the AF's and see what you were running at and full datalogs. You maybe able to blame the fault on them if they still have them and didn't erase them already. I don't know if it ran to rich it would wash the lube off the cylinders but for all four pistons to let go is nothing common if all four went. You wont know till you start disassembling.
Ask how much advance it had total.
I know an individual that paid a high priced tuner to tune his AEM EMS. The guy put in 37 degrees of advance and blew up the engine.
These engines need someone with prior experience working on them.

If you can, get the data logs, and when the motor is torn down, get photos of the damage. If they claim they don't have the data logs it is reasonable to ask why they got rid of the only thing that could prove whether or not they caused the failure, but I would not say that to them.
If I were in your shoes I'd consider this the cost of doing business and consider it a learning experience that cost me dearly, but you might want to consider talking to a barrister.
