Also true. You should remove all coolant, engine oil, trans fluid, and diff fluid. Probably 20 lbs or so in fluids right there!
What are your goals for the car? Is this a dedicated track car? Or a street car?
If you're worried about maybe 2 lbs in fluid, I'm assuming you have gutted the interior, removed all the sound deadening materials? pulled out the dash, removed the entire AC system, have a lightweight battery, seats, remove passenger seat, remove all airbags, carbon doors, carbon hood, carbon fenders, carbon trunk lid? How much do you weigh? Do you have a surge tank installed so you can run as little fuel as possible since the s2000 fuel starves? Have you removed headlights and taillights to replace with fiberglass covers? Titanium exhaust? Stock header weights a ton, as does the stock cat.
There are significantly better low hanging fruits to grab than trying to worry about 2lbs in coolant, which ironically will improve the reliability of your car.

Honest option, there are other things to remove to cut weight before even considering the weight of your adequate/ efficient radiator. Secondly, run a half radiator and single fan if you're really in need to fill your dreams
