The uphill esses are an amazing part of VIR - along with other parts of the track. Fantastic track and environment.
At most, I carry 115 on the speedo, 110 on the GPS, without aero. The car and I - or rather my skill - aren't comfortable with anything beyond that, and the datalogger agrees.
I always try to keep my wheel straight over the cress (1st right hand bend) and keep the dance going all the way up. My data shows significant upward g's (less weight) over the cress... if you are turning hard over the cress, you're doing it wrong and asking for serious trouble (e.g., the infamous R8 video & Richard Hammond). The combination of speed, lateral g's, and elevation is what makes it so exhilarating.

They key to the uphill esses is the lower esses. Try to straighten out the lower esses to gain a couple mph there. Also reduce your inputs in both upper and lower esses, this will not only make your car more stable, but also gain speed.

The uphill esses aren't as drastic as they look in the video posted above. Here is a S2000 running through them.

^It's pretty obvious the car in the video is a full on track car/race car. I imagine it's probably a bit lighter than your car too.

I saw a top speed of about 120(GPS) through the esses in a full track car with aero and all last time I was there. The video above is an old one of mine. I'm not sure I would try that flat without a wing, sticky tires, and a cage plus all the other safety stuff that goes with it.
The real fast guys on Hoosiers get closer to 130. If you want to see what that looks like watch this
