Welcome to S2kI.
The car sounds like a nice find, but being an "old guy" who drives the stew out of his S2000, I don't think you should assume that an older owner took it easy on the car.
Opinions vary when it comes to springs (and most other mods), and to a large extent the best choices depend on what you are going to be doing with the car, and what you want from the car. I'd suggest getting to know the car a little before deciding on mods, but of course, that's up to you.
I am running an Eibach Pro Kit over the stock shocks (which are non-adjustable Showa coil-overs, with external reservoirs at the back), and running very close to UK alignment (use search to find more info on UK alignment). I autocross the car and have been able to make the setup work very well, but there is one downside. The car doesn't have the kind of ground clearance most cars have to start with, so a 1" drop is as bad as totally "slamming" a Civic or Supra. The front strakes end up 3" or less off the ground, and I replace mine several times a year, becuase they scrap so often. You location will make all the difference here, and some people live happily with even greater drops, but keep in mind that public roads have pot holes, driveways, and speedbumps.
The Pro Kit, along with alignment afterward (a must, BTW), does not make a huge change in the way the car rides or handles, though over large bumps and/or dips you will (obviously) run out of both suspension travel and ground clearance sooner.

No, no, I wasn't insulted at all.
My age (59) doesn't offend me.
It's all good.
I had initially planned to go with a good set of fully adjustable coil overs and other suspension mods, and only put the Pro Kit on my car to see if I could live with the car lowered an inch, but liked the near stock ride and handling so much that I ended up leaving them on the car. On nice thing about swapping the springs is that it's not terribly expensive, and if you don't like the results you can swap back to stock or try a different set of springs fairly easily.
