Which temp (oil or water) turns on the fan?

Reason I ask, I've noticed when I turn my Accord off, after about three minutes the fan comes on for a few minutes, everytime. I don't think it's been like this. I never hear the fan on my S2k come on. The temp looks fine, so I don't know if I really have a temp problem or maybe a fan sensor.
