Beef spare ribs or Pork baby back ribs?
A kind church lady prepared and brought beef spare ribs which I was able to partake of and came away with a newfound appreciation for beef spare ribs. We went to grocery store and bought some beef spare ribs which was actually cheaper than pork baby back ribs.
My wife found a very simple recipe via internet and we tried it today. It turned out to be quite good. We enjoyed the beef taste. How about you? Do you enjoy spare ribs or baby back ribs? If you have a great recipe, please share. |
Pork, hands down.
I've had beef ribs six or seven times in my life. I think I enjoyed then once. I find the beef ribs are much tougher with more gristle. On one occasion, they were excellent, so I assume there is some preperation secret. On the other hand, I've had pork ribs dozens of times. Even "bad" pork ribs are pretty good. |
^That is interesting. My wife says she has to spend more time preparing pork with extra steps to get rid of the pork smell. However, with beef, she didn't have to take extra steps.
Also, I prefer beef ribs taste over pork ribs taste. You are right about beef being tougher with more gristle. If the meat falls off the bone, I think that is way too tender for my taste. I like the meat to be a bit chewy. And as I chew the meat, the deep taste comes out of it. Obviously, this is for carnivores only. :) |
I like them both but would take the baby back ribs if given a choice.

I like them both. However the membrane/sheathing on the backside should always be removed before cooking. What's important to me is that they are cooked, fall of the bone and a great sauce. The sauce is the boss!

Not a fan of the ribs...too much like mystery meat. If I get one bite of fat/gristle, I'm done.

I like baby backs dry rubbed cooked slow and the dipping sauce is everything.

Okay, Hond, now that you've made my mouth water, I may have to brave the elments and go to Famous Dave's and get me some babyback ribs since I've done all the cooking I'm going to do this holiday. I can only eat them every now and then but when I do, it's bababack pork all the way and Dave cooks them just right in my book. I get the hottest sauce they make, Devil's Spit.

Beef ribs hands down! The secret is slow, indirect heat. For four pounds of beef ribs plan on them cooking for 1hr. 30 min and turning them about every 20 minutes. Some prefer a dry rub, while others want a basting sauce. I prefer the wet product, so I baste every 20 minutes while turning and I place a small container of water near the ribs to add additional moisture while they cook.
If you find that beef ribs are tuff or stringy it's because they were not cooked long enough. |

Memphis is the place for babybacks, and we have sampled there many times. +1 does a good job with them; she boils them for a while first, then slow on the BQ. We don't do it too often, but when we do, I want a whole lot of them with only BQ beans and a salad.
We got our hands on a TN BQ pork shoulder over the holidays. That was quite popular and good too. |
All this talk made me drool, so while out running errands, we picked up some babybacks for dinner. However, I also love beef ribs done in the crockpot. The meat just falls off the bone. Yum.

It seems everyone prefers baby back ribs over spare ribs. I think I will be eating more spare ribs now that my wife figured out it is easier to prepare and cheaper than baby back ribs. :LOL:
From boiling the ribs to dry rub to dipping sauce, I really appreciate different people's preference. I just need to get some good recipes. Please share if you have one that you really like. :LOL: |

Baby back always. Texas Roadhouse has some awesome ones. They cook them for three days before they serve them. They literally fall off of the bone!!

Baby Backs for BBQ is the only way for me. But if you want some good beef ribs try this:
Chop carrots, celery, onion, packet of dried onion soup mix, and beef broth. Place beef ribs in roasting pan, pour everything over them, cover, place in over at 300 and slow bake until tender. Save the drippings gravy. Bake red potatoes, steam some mixed vegatables. |
