Can roses change color?

I don't think that we got all that cold this winter though.
If you cut them back in the fall and mulch or put a rose cone on them they last. I never lost roses in either Chicago or Minneapolis by doing this

I'm not even sure what the graft section is. I did mention we know pretty much nothing about growing roses.
