My only experience with ceramic knives is I own a Boker Gamma ceramic pocket knife. At 1.5 ounces you hardly know you have it in your pocket and it stays sharp far longer.

I would say avoid ceramic at all cost (that could be taken literally )
Bought four (4) Kyocera knives as a Christmas present for the kitchen 4 years ago.
Yes, they stay sharp. Yes, they do not 'attach' themselves to food.
BUT..... no matter how careful you are with them (and we treated them like no other knife we've ever had), they chip. and chip..... and chip.
...and then finally, they break (SNAP might be a better word). The 4th and last one had the blade snap in the center while cutting a carrot.
Expensive, VERY expensive lesson. We'll stick with 'traditional' steel from now on.
That's my story, and I'm sticking to it!

As I said earlier, I'm somewhere between "old school" and "Luddite" on knives. I've never liked stainless, but give me a good carbon steel blade, a set of stones, five minutes, and I'll be able to lose a finger and not notice it for about 10 minutes. ;-)

I have two ceramic knives and absolutely love them. They are made by Jaccard and have a lifetime warranty. I paid 25 for the 8inch and 15 for the pairing. I know someone who works for them. I have had no problem with them chipping. And they are EFFIN sharp. I cut everything with them.

I glad to see others appreciate a good knife as well.
My grandmother was a chef and lived on the second floor of our house.
She had two sets of knives.
Every Wednesday one set was dropped off to be professionally sharpened and the other was picked up.
Needless to say, I got rather spoiled.

We use my mother's knives. $19.95 for the set according to the tv ad. So we eat out a lot.
