Bill, one saddle was $3,500 and the other $4,500 originally. I am really disappointed to hear you can get scammed on PayPal as well.

Back in the early days I bought over $100K in stuff on Ebay and sold over $100K in stuff on Ebay with over 1000 rated transactions and 99%. Not much the last five years, only a few special things and no time to sell anymore. Also, with them buying PayPal they control everything and yet, in spite of all the money I've made them and paid them, they have almost always sided with a ignorant complaint like the T-shirt didn't arrive fast enough and they take the money out of my account! Then I have to spend hours to get my $15. Hate them now.
My wife is actively trying to reduce my lifetime of hoarding (while I constantly add S2000 parts and stuff...) and sells a lot on there.
I also am using to buy/sell Facebook Marketplace, Online Yard Sale sites (local FB sites) and Group sites like S2000 Marketplace, etc, Craigslist and more which are better for furniture and heavy stuff hard to ship (like saddles).
Be aware that there are a zillion scammers out there. The minor ones ask you to call them or text them or try to get you to email them outside of a "protected" (hidden) method, all they wanna do is sell your email/phone about 100-500 times in Romania to spammers for a few cents each. These are usually the ones who instantly respond to your new listing asking "Is your item still available" (totally ignore those) or they want to buy it for more than you are asking. Ultimately they try to send you a check for more than the item and refund them some money or some other crap. Craigslist is a hive of scum and villainy.
Ebay is a catch 22, you need to buy a lot of stuff over a long period of time selling things every now and then so you can build up some feedback. Be VERY wary of new accounts and little feedback that doesn't seem legit. On the other hand, usually when I buy bicycle stuff there now, if they have 98% or more 100+ feedback, I don't even think about it and figure PayPal would bail me out if anything went wrong.
The majority of them try to get you to wire money with Western Union or some BS site.
If it sounds too good to be true, it usually is.

I have missed what I found out later to be legitimate deals on ebay due to being wary of scammers. There are really that many of them out there. I missed an older, solid front axle toyota 4x4 pickup (those that know much about them know that it is hard to find one it very good shape, let alone in MN). There were so many other ones just like it that turned out to be "I am deployed and out of the country, so please only work through text with me... you can wire the money and I will ship the truck" scams that I just skipped over the mint one ... then met the guy that bought it later on and found out it was as good as the sale post said. It is a shame so many scammers ruin it for the rest of us

Changed my mind, since they have no personal info on me. I did reply to the email through eBay and told them I'd be happy to sell it them if they followed the proper eBay methods to purchase it.

I’ve never sold anything on E-Bay before. Last night I listed two saddles for sale. One for $1,495 and another for $1,995. Early this morning I receive an email making an offer for the first one . . . for $1,800!
They go on to say “because i won't be able to wait until the end of the auction due to the nature of my work. Please text me at ....................saying offer accepted only if my offer is been accepted to ease up this transaction and payment will be arranged immediately your text message is been received. Await text message anytime as i'm at work. Thanks”
After thinking WOW this is great, I see the person is located in MD and it says they have been a member since TODAY! Of course a big red flag goes up after seeing that. Scam, right?
What would you do?

Seems like you are better off dealing though PayPal or having the buyer send you a certified check.
