Gonna make the bean stew soon. Yesterday, had some leftover polenta with spaghetti sauce on top. Yummy. Nuked it. I found that if I make the polenta ahead and let it sit for awhile, or refrigerate it, it firms up nicely like a cake. I put it in some individual Corningware dishes.

I'm really going to have to try making polenta. If I have enough time this afternoon I may try it. I have some leftover marinara sauce that I need to use.

So easy...just boil water at a 3 to 1 ratio to cornmeal. Then add cornmeal slowly and simmer for about 10-15 minutes until thickened. I put a bit of butter and parmesan in mine. You can eat it like that, but I prefer a firmer cakelike texture.

I'm sure I'd like the firmer texture as well. When we get back from the vet's office, I think I'll mix it and put it in the fridge. Thanks for posting the instructions. I'm going to want the parmesan in mine, I'm sure.

Has anyone else discovered quinoa? LINK It's a cool high protein grain that has carried over from the INCAS.

We made a recipe with quinoa, pesto, marinated artichokes, sun-dried tomatoes, and a few other things; put into timbale dishes (or custard cups) and serve either hot or cold. Yummmmmmmmmmmm....

We have quinoa often. Love it. I especially like a quinoa salad with edamame.
