Setting up favorite stations varies greatly amongst different car stereo software. In general, you might want to choose an option menu, then select presets, then select the station you want saved. In some software, you can also simply hold down the button for the channel you are listening to, then select a preset location for the station/channel.
Many new car stereo headunits do not have a cassette or CD player. They now seem to want buyers to stream music from their smartphones to the headunits via Bluetooth.
Surprisingly, Bluetooth streaming music sounds pretty good. probably better than what you can get from cassette tapes. You can also put your digital music files on a thumb drive and play them via a USB connection, so you might still be able to play your oldies music presently on tape if you can digitize them into mp3 files.

It should be the same as setting stations on FM. It may depend on your radio/stereo system.

It really isn't that complicated. Read the manual.
We never had any problems with it in our CR-v.

I’ll chim in. MP3 files are the absolute worst quality of a digital recording for music. I can hear the difference between a CD and an mp3 copy. I. I’ve heard mp3 files that were downloaded from a computer and transferred to a CD. I can still hear the reduced sound quality. MP3 cuts off highs and lows and degrades music.
