Haven't seen most of the recent ones.

American Graffiti
Gran Prix
Lemans
The Hollywood Knights
Bullitt
Can't remember the name: the Burt Reynold's movie running moonshine trying to get the evil Southern sheriff that killed his brother-anyone?

Le Mans for the authentic motor sports look and feel.
Ronin for the story and the driving (maybe better than Bullit or the French Connection)
The World's Fastest Indian because it is one of the best "small" films ever, regardless of genre. and because: Anthony Hopkins.
If you have never seen this movie, check it out. It really is that good and by no means just a gear-head flick.
