I have big plans for Sunday night. I'm going to go watch cat videos at the Lyric theater in Fort Collins, CO. Maybe I'll even wash my Pilot tomorrow.

I pride myself on being a good cook. I am also fairly honest and will admit to failure.
I guess without realizing it I had always bought red over gray cured brisket.
Red i scured with spices, grey is effectively pickled in brine.
New England boiled dinner had cured brisket was the meat would keep longer because it was packed in the brine along with the other root cellar winter crops, potatoes carrots, turnips, cabbages.
If however you're cooking gray it is advisable to change the water after 20-30 minutes when the salt has boiled out.
I failed to do this and it was really salty. Boo-hiss shame on me, but I learned something I don't suspect I'll forget.

My New England boiled dinner is done with a smoked shoulder. It's been too long since we had that. I just can't eat Corned Beef. It's yucky to me.

Productive day. Clean sheets on the bed, washed, vacuumed and detail sprayed the Pilot and am waiting for the Lyric theater to begin the cat videos.
