Factory widths are fine with those specs (215/40/18 & 245/35/18). That will give a very good look. Those sizes will get you as close to flush with the fenders without modifications as you can get....

225/45/17 is pretty much the max you can run on 17x8+50 without fender work.
245/40 on an 8" wheel will make your turn in really soft and numb. Muffin topping is not beneficial to handling.
