I would think a large cut out area would work, it would hold bottles and maybe even the coveted soap dish....

Don't understand what the soap dish issue is, unless Dave wants one in the shape of an S2000?

We did the same thing, in fact we have large cutouts on two of the shower walls. A soap dish sits in one along with sex toys. (just kidding) About the soap dish.

I am at the point now that it will be easier (and cheaper) to talk to the installer and work things out. The GC refuses to budge.

I have already talked to the GC about adding blocking for grab bars and he has no problem with that. They are also going to let me insulate the garage before the drywall goes up (more cost savings).

I give much credit to anyone who builds a house. So many decisions. Just re-modeling the kitchen and bath over the years was enough for me. There were decisions I made that should have been given more thought to "down the road". No harm, but if I had to do it again............I guess I don't have enough patience, and also enough vision when it comes to that sort of thing. I have a sister who excels at the remodeling/re-decorating thing. She'd enjoy building a house.

There is also the budget issue. I had a figure in mind to re-do the kitchen and I was within 10% of that. Not bad, however I could easily have gone over that 10% with better countertop and backsplash. I'm kind of sorry I didn't....but it's been 10 years. Maybe it's time for a minor re-do. Oh no wait. We just bought a Porsche.
