I'm being a bit nit picky, but I hate those cup holders. Strikes me as a huge eye sore right on the center console. Personally I love the Porsche style cup holders that pop out of the dash.
...that don't work so well. Most German cupholders suck. While it may not look pretty, those big Ford ones hold cans and big gulps down VERY well. 'Murica!!!!
Actual interior shot. Yes there's some hard plastic. But they did give a brushed metal texture which I think does help. Also none of that is really a touch point. I'm someone who does care what the car's interior looks like and more importantly how well it works from a usability standpoint. I think they did a pretty good job. Does it compare with high-end Euro interiors? No, but when I sit in it I don't look around and think it looks or feels cheap, either. I'm happy with it and there are certain points of delight, such as the switchgear at the bottom of the center console. At the end of the day, though, everyone knows the interior isn't what sells this car -- it's the engine.

The only plastic with "brushed metal texture" is on the steering wheel and vent surround. The large trim piece IS brushed or textured aluminum (if not faux carbon)..

I did notice it driving, but you are right on that is not selling the car. That being said, they could've/should've done better for such a halo car that owners are going to cherish for some time.
If you're driving a GT350 and are busy complaining about the interior, it's not the car for you and you've completely missed the point of the car. Hand the keys to someone else!
