An addendum to clear a couple of things up that has been said:
The IAC assembly is actually a valve and a solenoid that is located on the left side of the intake manifold about in the middle. That's the thing with all the black hoses going in and out of it. Those hoses carry engine coolant. The IAC system needs to know when the throttle body is warming up (as mentioned before), thus the water. Based on this water temp, the solenoid can then adjust the amount of air to let in, hence adjusting the idle speed. You know those Hondata manifold gaskets? Those who live in cold climates and plan to drive the car under cold conditions will have a lot of as it will take that much longer before the idle speed can stabilize.

sounds very similar to my past problem Mike..
I went from stock to after market exhaust , had those symptoms but worse as mine would low idle stall at every light and stop sign, got a new Idle controller valve and that fixed it..
