Are there any performance driving schools around here?

There are some schools based at Texas Motor Speedway. I am in the process of checking into group rates (corporate) and the possibility of instruction in our cars rather than the Panoz or NASCAR variety.

Driver's Edge is the best thing going at the moment. NASA looks good in the long term o0nce it gets up to speed. LSR PCA is currently experiencing the "master race" problem so prefers only themselves.
I'm an instructor in the Driver's Edge group and used to be one in the PCA. I've been doing these at TWS since '95 and am originally from the northeast where I open Tracked for 20 years (and I wish we had something like the 'Glen down here!!). I can say that the Driver's Edge is absolutely the best group there is at TWS, and all brands are welcome. The folks who run the club purposely encourage attendance by all brands, and this makes for a better event with more experienced instructors. You won't hear the absurdly stupid "mandatory Porsche line" policy from us!
As of this year we are doing Motorsport Ranch (worthwhile but a lot slower and less challenging than TWS) and TMS (will be great fun) too. I know we are chasing down the "Gunter Ring too!
Check the website for dates, we have an event coming up in April and more throughout the entire year. The Honda-only event in September will be run by our instructors too (although, again, there are many benefits to going to a multi-brand event).
