Check that your dial in the car actually adjusts the valve in the engine bay fully closed. My old my99 s2k used to get sticky and not work properly, bit of wd40 squirted up the tube probably wasn't the right lubricant for the job, but I had it in the car while I was out on a drive,
Fixed me issue.
The valve can be found near the intake manifold on a hose (surprisingly).

Mine did something similar last year, regas, but still not cold. Was already at an air con specialist for the regas, and they ended up replacing the compressor (clutch was seized) and the condenser(nicely corroded), but now I've got nice, freezing cold air (not that it's been really necessary so far this year)
