I bleat on about this a lot to my customers and tell them to wipe it off straight away, most of the time its in one ear and out the other. Anyway a recent project I was working on had unprotected paint where the customer had not washed off the bird poo knowing I was popping over soon. This gave me a good opportunity to demonstrate what it acually takes to remove the damage. This stuff is deep, look at the damage left behind!!
This could not be polished out, it had etched away 7% of the top lacquer so the only way to remove it was to rub the area down with wet and dry starting off at 2000 and working up to 4000.
Now I had removed the blemish I had to go over the area using a cutting pad then finishing off with a polishing pad.
There were four areas of damage across the car altogether each one taking me half an hour to repair. Best way to prevent this is to wipe the droppings off immediately, spritz some water and wipe carefully with a soft towel. The longer its left on the more damage it will cause. Also try and reduce the damage caused by getting a decent wax on the car, it will protect the paintwork underneath.

There is a very good way to avoid bird shit ........ don't park underneath trees (or anything birds can sit on).
