I agree with the other comments that suggest you need to run the T1R's with a higher pressure (I run mine at 36), but you definitely need at least 100 miles to bed the tyres in and get rid of the mould release agents. I would be very surprised if your tyre fitter didn't tell you this as they usually do.

I've done about 200 miles and not much improved
I have the standard bridgestones on the front still, if I set the rears to 36 shall I leave the fronts as-is on 32?

The front end's been fine, and I had bridgestones on the back before and they seemed pretty good too.

The problem with tyres like Toyos is because the tyre deforms easier you'll be getting much higher slip angles, so it feels like the car is always sliding around even though it isn't really. This wouldn't be so bad if you had four matching tyres, because you'd feel it through the steering, but with good tyres on the front your steering probably feels sharp and solid as before. It may be that you'll like it once you build some confidence and realise that it isn't going to kill you ;-).

No, it actually is sliding around, any sharp change in direction and the back wants to slide. Before I could chuck it left and right and the car would just turn and go.
Could they have f@#ked my geo or something at the same time as putting the tyres on? Sounds unlikely but I've never had such a dramatic change in handling after a tyre change as this before.

Are you still on 16's? What size did you go for in the Toyo's? It's generally recommended that you go wider than OEM bridgestones as the contact patch is less on other makes. I think 255 is recommended... I had Toyo's on my 16's and I was a fan but never really pushed them that hard as the weather was never fantastic while they were on...
