Brake discs for track
So for the past year I've been running Stoptech Front discs with Carbon Lorraine RC5 but the discs have been suffering from overheating issues on track and i'm told that the pads are too aggressive but I know alot of people running this type of pads with OEM discs. The discs seemed to last about 4-5 laps (round Knockhill) before I lose all braking feel. The rear brake setup is stock but still after about 3 cool down laps you can still see the smoke coming from the front and rear. For brake fluid I'm running ATE Super Blue.
So was looking for suggestions on new discs or setup to stop this happening again.
Any help would be appreciated.

Standard discs are fine with track oriented brake pads, extra cooling helps a lot though. Search for a thread that was on here a couple of weeks ago that was called something like 'prefacelift cooling ducts'.

Standard or pattern disks are fine for track work, pads and cooling like has been said are where the best gains are to be had.
I destroyed a set of Yellowstuff pads at Blyton once I had removed the ABS fuse because they simply got too hot and the S2000 is quite a heavy car to be braking hard with, I believe if I Had fitted brake cooling ducts for the day I would have been fine, I've just installed front cooling and it's pretty easy to do, the hardest part is routing the hose so that it does not bind up when turning the wheel.

Get rear pads that match the front.
If the brakes are fading, then that'll be the pads. If the brakes are fading and the pedal goes to the floor that'll be the fluid, and if you get lots of judder and the discs split in two, then you can blame the discs. I don't know why you think your issue is down to the discs.
