EBC do a zinc plated disc.
Obviously the swept area of the disc will still rust if you don't use the car, but the plating should prevent the centre of the disc from rusting.

I didn't mask em off either but had an old set of pads so just fitted them and took it for a quick drive lol. Then again, mine was brush on rather than spray so there was very little to come off.
