Whatever feels right, from memory 3rd was my gear of choice, you need it high enough so the engine is out of it's power band and needs to work hard to lug it up the rev band, this way you show up any mid range improvement in HP and torque
If your very particular you can do a graph with rpm and speed or time, this shows in detail where the gains are.
