questions about offsets.
 

I currently have the VOLK GT-7s with +50mm offset. I am looking into possibly getting custom wheels made with the best offset.
for wheel size 18*8 and 18*9 what would be the best offset or better yet the correct offset and what size tires do you guys suggest?

There is no correct offset only offsets that work on the car. In the 18" look for around 50mm front and 62 rear.

what size tires would you run? and do you have s03 in 18s & 19s?

There are offsets that work on the car better than others and all 18" rims that Tirerack sells have offsets that don't work better than what you could get should you go custom.

For the rims you spec-ed out, you're going to want ~55+ fronts and 65+ rears and you'll be golden. That way, you can run the widest tires appropriate for your rim width (go to Jim for these types of recommendations / would guess 225 fronts and perhaps 265-275 rears?) without worries of rubbing at full compression, at full lock, at stock height or lowered a crap load (should you choose to go that route, but ~1-1.5" is a safe bet all around).

PS - As for your friend's M3, assuming it's the E46... there's nothing better than the BBS LMs... and he can get those from Tirerack.
