whats the widest DR I can run on stock 16 inch rims?

The BFG Drag Radial only comes in 255/50 for 16" wheels. I really hope you understand the limitations of a Drag Radial type tire on an S2000.

my car is a full drag car....


I was looking at the MTs 255-50-16 I believe with I could fit the 275 under there. I dont mind if it stils out

A 275 is awfully wide for a 7.5" wide rim, If you want to go over 255 you'll probably want to change rear wheels for something wider.
