Just bought a s2000 and now I'm very scared (I need help)

No one pointed out the 'lifting off mid corner"
Among all the other issues, this is one too.

Good point. Lifting off mid corner at high revs on a cold damp road is not a good plan! I My car hasn't seen wet roads more than a half dozen times in nineteen years. Those times I was caught out on a drive. The car remains in the garage if it's raining, or even looks like or might shower.

the back rotated like no car I've ever had before,
It's something, of course, that Honda worked hard to eliminate and tweaked the car every two years to minimize it. Major suspension and wheel changes in 2004 and 2006 can be largely retrofitted to your 2003 in a weekend of almost hand tool work (you're gonna need some way to compress the springs though). The OE springs and sway bars are commonly sold on Ebay by buys fascinated with "coil overs" and there are excellent reproduction 17" AP2V1 wheels available.
My immediate change to the car would be AP2 wheels and good Max performance summer tires in the "CR" sizes. Next change would be the springs and sway bars from the 2006 cars which are the most compliant and forgiving. But tires are key.
Note our cars are very tire sensitive and matched age and tread patterns are necessary. No mix-and-match.

I would get four new tires that match the conditions you will be driving in. I dont drive mine in weather under 45 degrees and therefore went with max performance summer tires.
Keep in mind that going hot into a corner and then completely lifting off the gas can spin an AP2 in ideal weather so an AP1 will be even more susceptible. Sounds like you were lucky to not ditch the car with mismatched tires on a cool/wet day.
I found a spring spacer on my front drivers side two days after I bought the car used, Two other owners and 10+ years after it left the factory...

You can do all these changes that people mention and the car will feel better. But if you are anywhere near the limits of traction and you lift... it will rotate.

I agree with everyone else, tires are definitely needed, alignment too. Before changing anything else though (i.e. sway, etc...) what other mods have been done to the car previously? What suspension is it currently on (OEM, aftermarket coils, springs)? You should definitely consider going for some hpde events once you get everything sorted out.
Good luck

Oh and buy four matching tires.
The previous owner of your car didn't maintain it well from the sound of it & if you don't drive with a bit more thought it will not last long.
