I like the JB course, I enjoyed it and got a lot out of it.
The Jim Murcott course is meant to be similar (I cant comment becuase I haven't done it).
With most courses you will have to do the basics (swerve and recover, emergency braking, good roadcraft, etc) before they let you do the fun stuff (track orientated stuff).
There is also the driver training stuff that some car clubs offfer (track based which is also heaps of fun, even though you might not have heard of your instructor they will probably be very good steerers.)
Enjoy.

The HART course is at St Ives - not too far from North Sydney.

Just throwing up another option, but i've heard good things about the BMW driver training programs; good instructors and content. From memory it has 2 stages, the first is introductory stuff like mentioned above and the second is the serious stuff, however you must do the first stage to be eligible for the second. They are relatively exxy, but they do provide you cars (M3s in stage 2!).
Another one i've heard given good wraps is the porsche driver education program up on the Gold Coast but thats not to applicable for yourself

I would recommend doing driver training in your own car.
1. You get to see what it's capabilities are.
2. If you have to do a swerve and recover out on the road you know what your car can do not what a junior supercar with stability control does.
(I never knew what the limits of my cars (and me) were until I took them on a race track). Having said that, it would be fun to fang a Boxster, 911, M3 around a track.

Courses are charged 'per person'.... anywhere from $150 to $300/day - depending on the course and how many people!!
If you've never done any driving courses or much track work.... then start with a 'defensive', followed by 'advanced' and then do something like the 'John Bowe High Performance Race' course!!
