Your weight doesn't have much to do with it. Try to get a bike that you can put both feet flat on the ground while sitting on it. If you can't quite flat foot it, get some boots with a little heel to 'em. (Should be wearing boots anyway.)
The SV650 is a good choice. You can kill yourself on any bike. Take the MSF course, respect the bike, and you'll do fine. I started on a 700cc and 24 years later I'm still riding.

step-over height is yet another important point to consider, among MANY others
you have to keep in mind though, that 24 years ago, your 700cc probably had less power than a ex500
i just don't think that the SV650 is a good beginner bike; it has balls, that is a bbbbaaaddd characteristic for a beginner bike
my advice dont start off with a v-twin bike. too much torque.
second: eat something 120 is a bit light. i would actually recommend a gsxr 750 i own a 600 but i got bored with it after a month. sure i dont weigh less than a semi truck tire but i would still say go with a 750 and stay away from v-twins

EX500 60hp
SV650 73hp
My 1985 Honda Nighthawk S 85hp
The EX500 is a good choice, but the extra 13hp of the SV650 is not huge. The bottom line is you have to respect the bike. If you are stupid, you are going to kill yourself on 250cc bike.
What's nice about the SV650 is you can live with it indefinitely AFTER you learn to ride. And it is not as twitchy to learn on as any supersport model. It is probably true that tiny 100 - 250 cc bikes are safest to learn on but nobody wants to keep 'em after they learn.
just pay for the cycle riders course you will learn everything you need to know about riding. i know i took my course at harley davidson of orlando and we used a 500cc 1cyl buell blast. piece of $hit for sure but i learned the proper way to ride along with getting endorsed. well worth the $200 I promise
a note of warning on the SV:
I was just out riding with my "crew", and one of the new guys brought his older carbed SV650... it wheelies off the gas; my F4i is less eager to do so
if you get the SV, be ready to wheelie, if you noobishly drop the clutch
