Default tuning choices

ok, im not really all that knowledgeable when it comes to bikes and their parts, but I am looking for a little information. first some background. I am on my school's Formula SAE team and we are going to try and have an injected bike motor(cbr600rr or such) as the powerplant, however the fact that we must have the engine breathe through a single 20mm restrictor will most likely muck up all the fuel maps on the stock computer. I am very used to tuning on Honda vehicles, but im kinda lost when it comes to the two wheeled variety.

are there any tuning options out there that the end user can take a wideband to it and tune away? any free programs(ala UBERdata, Turboedit, etc..), any way to chip the computer to run two maps like you could with an OBD1 car?

any help or links to help would be greatly appreciated.
