The 911 type 993
A very impressive car (and investment!) you have there

If I can own a C4 at some point that would be pleasing enough. Just need to tread carefully as there are horror stories of them turning into money pits. Failing the C4 it may well have to be the Tip...
although most of the purists really hate the idea of the Tip. It may serve well in the busy traffic I see around London...

You need to try Tip and manual. If most of your use is in London, buy C2. The back end was tamed by the multi-link suspension in the 993 so I don't think adhering to C4 is necessary - look at both it will widen your options. I don't understand your logic if not C4 then Tip?? Can you explain?
Judging by your comments, the backend is no where near as lively or unpredictable as the S2000 - is that a fair assumption? If so, then like you say, a C2 could also be considered. It seems more difficult to take test drives for these given how rare/cherished they cars are...
The tiptronic gearbox in the 993 is one of the worst gearboxes I've ever had the misfortune to drive. I hated every moment of driving the 993 tiptronic gearbox. It's like shitting on top of a cake and still calling it a cake. For disclosure I'm running the 8 speed auto in my M135i which is the first genuine auto I've liked.
In the dry at least, the RS is far more planted in the rear but like any car if you overstep it and don't have the skill, you could be in trouble. I don't have the skill so I drive within my means. At the rate these things are increasing in value, I cannot afford to bin it! I see a few 993 up here driven in the wet (one being a 2S) too so I doubt there is the concern that you raise about traction. In the snow it would be different but as I said I wouldn't drive one in the snow. I suspect you will regret the Tip from reading Chilled's post.
I have to say I have been fortunate to decide on LHD just because of the rarity and the price of RHD RS that I ended up with LHD as I get lower back ache driving the RS too long (at the time I was looking I didn't know how offset the RHD pedals were) as with the S2000 so if the pedals were too offset, I suspect RHD would genuinely be uncomfortable for me. If you don't go through many tolls or plan to use it daily then perhaps look at a LHD also?

I'm a mad fan of 993 as well.
The only possible put-off factor should be the layout of the pedals on RHD. I've sat in a few 993's and I found sitting position quite awkward whereas it's simply perfect in S2000.
Can someone who's had much experience with RHD 993s can chime in in terms of the offset pedals?
