OH! I KNOW what I'm missing.

Roasted

Smashed

see, its like this: for roasted potatoes, you just throw some taters in a pan and fry 'em up. Boring. But with mashed taters, you have to boil them, smash them and butter and milk, and other special things, while making the gravy, from turkey parts and bacon dripping. Then you mix 'em up together and DAMN! that shit tastes GOOOOOOOOD.

That's where you are going wrong then Wicky .... for roasted you par-boil them first ..... while doing that you have a pan of fat in the oven. You then put the par-boiled taters into the boiling hot fat and return them to the oven. After about 20 minutes you turn the taters to make sure that they crisp up all round.

To make the taters REALLY tasty you use beef fat and dripping to cook them rather than vegetable oil ..... but don't tell your doctor if you do that
