Vetrinary on the product, particularly standing over time, is not healthy, unless you have a bin to wash and sanitize the cooking surfaces, which the smaller stands do not have.

I'm guessing New York has bigger problems, and/or the Rat's Union is making sure the ambient bacteria count is high enough to maintain the Rat's primary job.
