About two months. One month for the main fermentation stage. Then another month for carbonating in the bottles. I brewed 5 gallons last night and I'm gonna brew another 5 gallons tonight.

Geman Ale.....I wish I had an extra fridge to lager with.

This batch should be around 6-7% alcohol. Really light hops and grains. I don't know if you would even call it a German Ale anymore, but I am using a German Ale yeast. I took a recipe and adjusted to my taste.

Someone at work called it Hefeweintzen.

Cool. I love Weissen. What's the difference between Hefeweissen and Weissen anyway? Anyone know?

Weissen in "White" beer. Hefeweissen refers to White Yeast.
