those are the same as in HK, they cut it into slice of meat in front of you and put it into those "noodle slice" and then with souce and other vegetable which I don't prefer....sorry, hard to put all these into english.

oh I got it.

in California, people don't get that much luxury so skin and meat are together. I do remember in HK they seperate the skin and meat.
