Splenda is the closest molecular equivalent to sugar... it's structrually similar but has one molecule is on the opposite side compared to real sugar.

So it fools our tongue that it's sweet, but does not fool the stomach into thinking it's digestible.

I love string cheese ... but the one I get from Costco disappoints me. It isn't stringy enough
